2017 GT350 with 17K miles. In the last month I have added 3 gallons of coolant. Car is running fine and there is no evidence of a leak.

I'm sure you have checked the oil level as well? Keep looking coolants going somewhere, hope its not a head gasket.

Turns out it was a bad water pump which the dealer replaced under warrantee.
