Does the GT350 use a thermostat to help regulate the engine oil temperature? If so having the thermostat checked might be an option. If it were mine and the water temperature and oil pressure were OK then I would not worry about it. Once it starts moving the temp should come back down. The oil temp getting above the water temp is pretty common in the 110 Texas heat when stop and go on Central.
