I recently bought a 2017 gt 350 with 18,000 miles. The wife and i went eat out and on the way home i got on it a little and i noticed the engine light blink a few times and then went away. Anyone know what would cause this and is it something i need to be concerned with?

You need to see if any engine fault codes were recorded. If you don't have a reader, bring it to a shop, or even Autozone.

Just an FYI, solid MIL indicated stored emissions-DTC. Blinking MIL indicates cat-damaging misfire. Once the condition goes away it will either stay on steady or self-clear after a fixed number of drive cycles. You can purchase an inexpensive DTC reader from the auto parts store to at least read emissions-based DTCs. (P0XXX codes)
